Originally from northern Spain, Chef José Luis “Chele” González has made a lasting impact on the Philippine culinary scene. After a career shift from DJing, he trained in renowned kitchens such as El Bulli, Mugaritz, and El Celler de Can Roca. What began as a short visit to the Philippines led to a permanent move, where González has continued to innovate.
While well-versed in traditional Spanish cuisine, González is celebrated for his modern take on Filipino food, blending local ingredients and techniques with international flair. His restaurant, Gallery VASK, debuted on Asia’s 50 Best Restaurants list in 2016, a milestone he continues to build upon with his flagship, Gallery by Chele. In 2023, González — Tatler Dining’s Chef of the Year — celebrated a decade of culinary success with collaborations featuring international chefs like Sun Kim and Virgilio Martínez, as well as Filipino luminaries like Jordy Navarra and Margarita Forés.
In 2024 González and architect Carlo Calma launched Asador Alfonso, a destination restaurant inspired by Spanish roasting houses. Alongside Gallery by Chele, González manages Deli by Chele, Chef Chele’s Kitchen, and co-owns Adviche F&B Solutions, where he serves as culinary and creative director, overseeing projects nationwide. Globally, he represents the Philippines at events like Madrid Fusion, advocating for Filipino cuisine on the world stage.
Adding to his ventures, González launched Medium Rare, an event series combining his passions for cooking and DJing, showcasing his creativity in both culinary and musical spheres.
