Filipino culinary icon and co-owner of Gallery by Chele, Chef Carlos was alreadypassionate about cooking when he was only 10 years old. His early passion eventuallylanded him in the kitchens of some of the most celebrated restaurants in the world,including Arzak, Atzurmendi, Mugaritz, and Nerua, where he explored a diversegastronomic landscape of flavors, ingredients and techniques. Yet apart from incrediblefood, Chef Carlos brings something special to the table – in-depth knowledge of theF&B industry including its processes, operations and elements that make for asuccessful restaurant business.
